The production of our naturally cloudy organic apple vinegar begins with the careful selection of aromatic, certified organic apple varieties. A tart apple juice is extracted from these apples. The next step is to ferment the apple juice into cider, which is then used to produce naturally cloudy apple vinegar through natural vinegar fermentation. The vinegar is neither filtered nor pasteurised - a valuable, highly prized natural product and a true classic in the kitchen, used to enhance salads and all kinds of dishes.

Naturally cloudy, cider vinegar is the perfect partner for our oils: In a vinaigrette, it tastes particularly good with nutty oils such as walnut, hazelnut, macadamia or argan, which perfectly complement its fruity, tangy flavour. This fruit vinegar also works well with mild classics such as rapeseed, linseed and sunflower oils. Due to its acidity, we recommend adding a little cane sugar, coconut sugar, honey or agave syrup to a naturally cloudy apple cider vinegar dressing to add a sweet note. Diluted with mineral water, naturally cloudy apple cider vinegar is a refreshing drink, not just in summer.

Traditional production thanks to the vinegar mother

If you discover a cloudy, jelly-like mass in an open bottle of vinegar after a while, it does not mean that the vinegar has gone off. On the contrary, it is a good sign that the vinegar has been produced traditionally and is not pasteurised: A so-called "vinegar mother" is forming. This is what experts call the important acetic acid bacteria that convert alcohol into acetic acid with the help of oxygen. When vinegar is opened, these natural helpers may become active again

Vinegar in the kitchen

Our fine vinegars and mill-fresh oils can be used to make vinaigrettes in endless variations. The basic recipe is very simple: 1 part vinegar, 3 parts oil and salt and pepper to taste. Our vinegars are also ideal for seasoning soups and sauces, and wherever a touch of acidity is needed to add a little extra flavour. Tip: A splash of apple, sour cherry or blackcurrant vinegar in mineral water is refreshing and thirst-quenching!

Now it gets colourful: Our naturally cloudy apple cider vinegar is now available in a Flowering Meadow Edition. By purchasing this limited edition bottle of cider vinegar, you are supporting our regional biodiversity project.

Our flowering meadow is located directly opposite our factory and covers an area of 40,000 square metres, the equivalent of six football pitches. Flower strips are areas sown with a diverse mix of flowering plants that provide food for bees, wild bees, bumblebees, butterflies and other insects. Located on the Weser cycle path, this project aims to create a habitat for plants and animals and contribute to biodiversity in the region.

For every €8.90 you pay, €5 will go directly towards cultivating the large flowering field. All contributions and proceeds over and above the direct costs of rent, seeds, cultivation and maintenance are passed on in full to NABU Kreisgruppe Holzminden e.V., which uses them for regional nature conservation projects. Even if there is no surplus, we donate a fixed sum of €1,500. Recently, the surplus was donated to Boffzen Aktiv e.V.

Der Essig schmeckt sehr gut in allen Salaten und hat im Gegensatz zu Balsamico oder Balsam-Essigvarianten, die sehr lecker sind, nur 0,5 g Kohlehydrate und so gut wie keinen Zucker, was bei meiner ketogenen Ernährung sehr wichtig ist.

Bestelle ich regelmäßig. Ein leichter Essig für leichte Salate, wenn mir mal nicht nach deftig ist. Nicht zu süß. Und naturtrüb ist immer gut!

Dieser Essig kommt bei mir täglich zum Einsatz. Recht hochpreisig aber sehr gut. Auch gut geeignet, um ihn morgens in einem Glas Wasser zu trinken.
