Tomato mozzarella with balsamic vinegar

Our Crema del Borgo is a sweet balsamic vinegar with a creamy texture. Made from freshly pressed grape juice from the Pinot Noir grape variety, produced in the style of a genuine Aceto Tradizionale. The grape juice is fermented in two stages, first into red wine and then into vinegar. A gently simmered grape must from the same grape variety is added to the young vinegar, giving it its typical sweet note. It is then stored in small oak barrels for two months to mature into a mild, harmonious balsamic vinegar.

The fine balsamic vinegar is suitable for preparing fine salad dressings and sauces. It is also a delight as a finish for the classic tomato and mozzarella salad and with goat's cheese.

Traditional production thanks to the vinegar mother

If you discover a cloudy, jelly-like mass in an opened bottle of vinegar after a while, this does not mean that it is spoiled. On the contrary, it is a good sign of a traditionally produced and unpasteurized vinegar: A so-called "vinegar mother" forms. This is what experts call the important acetic acid bacteria that convert alcohol into acetic acid with the help of oxygen. When a vinegar is opened, these natural little helpers can become active again under certain circumstances.

Ziemlich hochpreisiger Balsamico, der sein Versprechen "Crema" absolut nicht hält. Insofern kann ich mich den Formulierungen der anderen Bewertungen "feine Süße", "... der Balsamico ist dickflüssig" überhaupt nicht anschließen. Geschmacklich geht er für einen guten Essig durch (Schade! Hatte ihn mir zu Ostern gegönnt und... mehr >>
wurde derbe enttäuscht). Deshalb leider nur ein Stern. Der zweite Stern ist für die ökologisch sinnvolle Glasflasche.

Enttäuschend, kaum Geschmack, nur süß

Wir haben es als Probe bekommen, und mir persönlich ist es etwas zu säuerlich. Was ich allerdings ganz toll fand weil die Konsistenz ließ sich wunderbar über den Salat bzw Tomaten verteilen.

Die Rezeptur entspricht leider gar nicht meinem Geschmack. Schade !
