The Artichoke

The artichoke is the name given to the flower head of a thistle-like cultivated plant from the Asteraceae family. It forms shrubs and flower buds about 2 metres high, which are edible and renowned for their fine flavour. Depending on the variety, artichokes can weigh up to 500 grams and have an average height of 12 cm. The colour of the leaves can vary between green, purple and red. In countries such as France and Italy, the artichoke is considered a delicacy and is becoming increasingly popular in this country.
