Cashew nuts and pumpkin seeds

A spicy and hearty pesto variation: with fine cashew and pumpkin seeds, finely seasoned with Parmesan, roasted onion and a fruity hint of apple, as well as our own roasted pumpkin seed oil. Made with organically grown ingredients, our pesto is ideal when you need to cook quickly: Just toss it over hot, freshly cooked pasta, sprinkle a little Parmesan over the top and you are ready to go.

Pesto - a long tradition

The term pesto comes from the Italian "pestare", meaning "to mash", and refers to an uncooked sauce made from finely grated, ground or mashed ingredients such as nuts, cheese, herbs, spices and oil. Ancient Rome is said to have had antecedents of today's pesti, which is the correct Italian plural. Our unusual take on pesto with a local flavour is not only delicious with pasta or as a spread. It also makes a great addition to hearty German dishes such as mashed potatoes or potato salad.

The Styrian oil pumpkin

Not all pumpkins are the same: from butternut pumpkin to Hokkaido pumpkin, nutmeg pumpkin, patisson pumpkin and many more, the variety of pumpkins is enormous. The pumpkin seeds of the Styrian oil pumpkin are used to make the pumpkin seed oil for our pesto. This is an Austrian variety of pumpkin that was grown in Styria at the end of the 19th century and was only known there until the 1970s. Compared to many other pumpkin seeds, the seeds of the oil pumpkin are not cream to white, but greenish. The oil pumpkin itself usually has a yellow-greenish skin and can be easily distinguished from the bright orange Hokkaido pumpkin.

Usage

Simply mix with freshly cooked, hot noodles as required. This tangy, hearty pesto with a homely flavour is also perfect on baguettes and sandwiches. It can also be used to enhance hot dishes such as mashed potatoes or potato salad.
