Origin and harvest

The cashew tree, also known as the cashew, acaju or kidney tree, belongs to the sumac family (Anacardiaceae). The Portuguese were the first Europeans to discover this tree in north-eastern Brazil. It is now grown in many other countries with tropical climates. The name cashew comes from the Portuguese name Caja or Cajueiro. The name Acaju comes from the Indian language Tupi. The trees bear the cashew fruit below the fruit stalk, the cashew apple, in which the actual cashew kernel grows. They also thrive in poor, nutrient-poor soils. Cashew harvesting takes place between February and the end of April. During this time, the ripe cashew nuts fall from the tree and can be collected. When harvested, they still have a very hard shell and a brown skin around the kernel. Like pistachios and almonds, cashews are botanically classified as drupes.

Taste and use

Light-coloured, kidney-shaped cashews have a slightly sweet and nutty flavour. They are ideal as a snack on their own, but can also be added to cereals, salads, soups and vegetable dishes, and as a baking ingredient in breads and rolls. They are particularly popular in Asian cuisine. They are used in rice dishes and are a particularly tasty ingredient in curries. They are also used as a garnish. Cashews should always be stored in an airtight container in a cool, dry place to preserve their high quality.
